Origins and history of sushi

• Ancient roots: The oldest form of sushi, called narezushi, began around 400 B.C. in Southeast Asia as a way to preserve fish by wrapping it in fermented rice. The rice was not eaten.
• Modern creation: Hanaya Yohei is credited with developing modern sushi in Tokyo around 1824. He made it a fast-food item by putting vinegared rice and toppings together, a method that was much quicker than the traditional fermentation process.
• From street to restaurant: Sushi was originally street food. The 1923 Great Kantō earthquake caused land prices to fall, allowing many street vendors to open permanent, brick-and-mortar restaurants.
